Bruschetta - Cathy Amedeo
Ingredients:
6 large tomatoes, chopped (homegrown are best)
1 large onion, chopped finely
6 tablespoons virgin olive oil
7 cloves garlic, chopped
1/4 teaspoon salt
romano cheese
Italian bread or bruschetta chips
Instructions:
Mix and chill one hour before serving.  Slice Italian bread and butter the top.  Broil until brown, then spread bruschetta on top of bread or bruschetta chips.  Sprinkle with cheese and serve.
