Bruschetta - Teri Dougherty
Ingredients:
2 tomatoes, cubed
1 teaspoon basil, chopped
1 tablespoon balsamic vinegar
4 tablespoons parmesan cheese
1 clove garlic, crushed
salt and pepper to taste
Instructions:
Refrigerate overnight.
Pre-toast sliced Italian bread slices with a little olive oil.  Toast on high heat for 2 minutes.  Spread bruschetta over toasted bread and serve.
